At Bellini Cookery School, we have been teaching healthy cooking with easy-to-do recipes for over 10 years. We offer classes for every level: absolute beginners, gourmet cooks, chefs; whatever you are looking for, we have the class for you!  Our many years of experience working within fast paced restaurant environments have allowed us to gather knowledge and information which we will teach you in our classes, that will enable you to cook effortlessly at home--you will be amazed at what you can achieve, with just a little guidance from us.

Cook and Go

A group cooking class which is part hands on and part demonstration.

  • You work as a team and prepare the recipes along with Chef Angelo. He explains the method as you go, as well as sharing valuable hints and tips to enable you to cook more skillfully and effortlessly at home.
  • Questions are addressed throughout the class.
  • You take all the food home with you.
  • On Regional Cook 'n' Go, you have the option to dine in for a mere £6 supplement which includes a free Regional Wine Tasting

Cook, Wine and Dine

A group cooking class which is part hands on and part demonstration.

  • You prepare the recipes along with Chef Angelo, who explains the method and shares his knowledge and secrets with you.
  • Questions are addressed throughout the class, and everyone sits down together at the end of the class to relax and enjoy the fruits of their labour, along with some wine.
  • A brief wine tasting is included.

Cooking Parties

Cooking-Together-Day For Friends And Family (minimum 5 persons)

Celebrate a special occasion, such as a birthday, anniversary, by having a fun cooking class together with friends/family, doing the menu of your choice under the instruction of Chef Angelo.

  • A happy, fun, informative and relaxing time for all.
  • Sit down together and relax after you have finished cooking and savour your delicious dishes with wine!
  • You may choose a class from our Class Schedule or we can arrange a special menu with you in advance.
  • Examples of classes -  Fresh Pasta Class, Italian Dinner Party, Wild Mushroom Class, Easy Meals, Fish And Seafood, Bread And Pizza Making, Florentine Cuisine.

Demonstrations

A basic group class on an array of different topics. 

  • Chef Angelo demonstrates various cooking recipes, explaining and talking you through the method.
  • He will share valuable hints and tips from his wealth of culinary expertise and show you how easy it is for you to master the recipes at home.
  • There is a question time at the end of the class.
  • A glass of wine will be served on arrival and you will have the opportunity to taste the dishes during or after the class.

Private Classes

A private class on which Chef Angelo will shares his secrets on authentic Italian cooking, to help you to create your special choice of recipes/dishes.

  • Informative and relaxed, you may choose to do the class alone or together with your partner, parent, friend/s, learning new techniques and cooking skills from a skilled and talented chef which will expand your culinary knowledge and enable you to master new recipes you may not have thought possible.
  • You may choose to challenge yourself to cook a fresh lobster or pheasant or come along to master making fresh filled pastas - it is all up to you!
  • You may choose to take your delicious food home or relax and enjoy after the class with wine.
  • We would arrange with you in advance exactly what you would like to cook e.g.  pastas, Regional Italian cooking, healthy cooking or choose a class from our Class Schedule.

Hi Folks,

 

May is on the horizon, days are stretching out and I have heard from a little birdie that  an amazing May is forecast - thank goodness, it truly seems to have been the longest winter ever!

 

We have enjoyed many Family Cooking Parties during April, with families of all ages meeting up to spend fun, quality time together. A delicious meal of their choice was prepared and cooked, followed by a sit down together to relax, chill and enjoy the fruits of their labour, before heading off home with their Bellini Easy Recipes to conquer the kitchen! It's all been a bundle of gourmet fun and Chef Angelo and I have enjoyed it immensely.

 

Chef Angelo has already been out foraging the countryside to kick off his 2013 mushroom collecting, but with no luck as yet, the harsh, long winter has obviously delayed the arrival of spring but we shall keep you posted.

Recipe of the Month


Tender young asparagus are now in season so let's make a delicious asparagus risotto - yum!


Risotto Con Asparagi


Ingredients:

  • 350g risotto rice (arborio, carnaroli, vialone nano)
  • 300g asparagus, trimmed, peeled and cut to 1cm pieces (reserve the tips)
  • 200g parmesan cheese
  • 50g butter
  • 1/2 onion (medium), peeled, chopped finely
  • 1250ml vegetable stock
  • 125 ml white wine
  • salt and pepper to taste
  • some extra parmesan to add at the table

Method:

  1. Poach asparagus tips in a little vegetable stock for 2 minutes and reserve to garnish
  2. Put the stock into a saucepan, bring to boil and leave it simmering on a low heat
  3. Put butter into a heavy saucepan on a medium heat, add onion and cook until onion is golden
  4. Add asparagus and cook for 2-3 minutes taking care not to burn
  5. Add wine, continue to stir, add rice and allow to reduce by cooking for a further 2-3 minutes
  6. Stir in 1-2 ladles of boiling stock and simmer gently until it has been absorbed, stirring constantly
  7. Continue to add boiling stock, a ladle at a time, stirring constantly over a 15-18 minute period - no cheating, you have to stir all the time or encounter a risotto disastro!
  8. Add parmesan, salt and pepper to taste
  9. Put risotto into bowls, garnish with asparagus tips, extra parmesan can be added at the table if you wish, serve immediately (risotto, like pasta, should be served al dente)

Events

We were delighted to host a stirring rissotoRisotto Evening with the American Women's Club of Central Scotland along with Zola Bazarnic the Principal Officer at American Consulate General Edinburgh.  


An array of tempting, mouth watering risotto was achieved with ease--con fungi (with mushrooms), delicato (chicken and fennel), con piselli e scampi (prawns and peas) and con asparagi (fresh asparagus).


It was all fun and all go, relax at classwith stirring a-plenty, then a relaxing sit down to chill after all that hard work with some Frascati and Refosco.
